This cake is an interesting take on a classic peanut butter cake (but, it doesn't have a peanut in sight!). Instead, it is made with Biscoff cookie butter; a creamy cookie butter made with Lotus Biscoff cookies crushed and creamed together into a buttery, cinnamony, delight. This sponge cake is sandwiched with caramel filling, crushed Biscoff cookies, and Biscoff buttercream.
